Although the original location in Chennai seemed far away, the idea of ​​indulging in innovative South Indian cuisine in such a prestigious location was appealing. Imagine my joy when I learned that Avarthana has opened at Delhi’s ITC Maurya and you can now feel the magic of its famous cuisine at your fingertips.
ITC Maurya, already home to legendary dining experiences such as Bukhara and Dum Pukut, now boasts Avarthana under its roof. This exceptional culinary fusion quickly elevated this hotel to a must-visit for food lovers like me. Alongside Bukhara’s legendary northwestern frontier cuisine and Dum Pukut’s delicate Awadhi flavors, Avarthana’s promise of an inventive take on traditional South Indian flavors was irresistible.
Stepping into Avarthana, you’ll find a sophisticated yet welcoming atmosphere that sets the stage for an incredible culinary journey. The 13-course tasting menu unfolded elegantly over two hours, and each dish was a revelation in flavor and presentation. The journey started with a bitter gourd amuse that surprised my taste buds with its depth of flavor and set a high standard for what followed.
Chef Nikhil Nagpal’s expertise is reflected in every course. The reinvention of traditional ingredients like bottle gourd, bitter melon and pumpkin into delicious dishes was truly ingenious. Gourd spaghetti with plum chutney and tangy buttermilk spheres atop crunchy chilli potato nests were outstanding examples of turning overlooked ingredients into delicious dishes.
The menu shows the perfect balance between tradition and innovation. Coconut stew with asparagus, shrimp and coriander dumplings, and chargrilled pork belly with Ooty chilli jam are just a few of the highlights that blend regional authenticity with global culinary techniques. Each dish not only satisfied the taste buds but also told the story of Avarthana’s dedication to pushing the boundaries of cuisine.
